Ingredients
  

  • aloo masala
  • 3 tbsp cooking oil
  • ½ tbsp cumin seeds (jeera), mustard seeds (rai)
  • ¼ tbsp fenugreek seeds (methi), pinch of asafoetida (hing)
  • 1 tbsp garlic (lehsun)
  • ¼ tbsp ginger, green chili (2-3), curry leaves, boiled potato (4 medium sizes)
  • ½ tbsp Haldi, red chili powder, salt
  • ½ lemon,
  • coriander
  • prepare the batter for Vada
  • ½ cup besan (plain flour)
  • 2 tbsp rice (plain flour)
  • ½ tbsp red chili powder, Haldi
  • ¼ cooking soda
  • ½ tbsp salt
  • ½ cup (water as required)
  • oil for deep fry.

  • dry garlic chutney

Instructions
 

  • firstly take a pan and switch on the gas, add 3 tbsp cooking oil. and keep a gas medium flame.

  • add a pinch of asafoetida (hing), ½ tbsp cumin seeds (jeera), ½ tbsp mustard seeds (rai), add ¼ tbsp fenugreek seeds (methi).
  • boiled potato (4 medium sizes),add ½ tbsp Haldi, ½ tbsp red chili powder, ½ tbsp salt, and mix well.
  • add ½ lemon and mix well,
  • add coriander. Vada masala is ready. keep in aside.
  • take a large blow, add ½ cup besan (plain flour).
  • add 2 tbsp rice (plain flour).
  • add ½ tbsp red chili powder, ½ tbsp Haldi, add ¼ cooking soda, add ½ tbsp salt.
  • Mix well, add ½ cup (water as required). It is to be noted that the batter, has to be kept thick.
  • Make a small ball of the spice which is kept. Put the ball in the besan batter.
  • When hot the oil Put the besan ball and deep fry keep the gas medium flame.
  • vada is ready, Now take the pav, apply green chutney on it.
  • And after that apply dry garlic chutney and then keep the vada and eat it with fried chilies.

Notes


If the batter of besan flour becomes thin, then add rice flour and some besan flour to it.
