Dudhi na Muthiya||Dudhi na Muthiya recipe||Muthiya: Gourd muthiya is a special dish of Gujarat. Gourd muthiya is a healthy and tasty snack. We like to eat it in the morning and evening breakfast. And children eat it with great fervret, gourd muthiya is also made for children’s tiffin. It is eaten with sauce or curry. Gourd muthiya is very golden in appearance and cooked in steam, is made in less oil.

Ingredients
- 2 cup grated bottle gourd (dudhi / lauki)
- 1 cup Besan flour
- 1 cup Rice flour
- ½ cup bajri flour
- 1 cup Corn (Makki) flour
- 1 cup grated onions
- 2 tbsp grated / paste garlic
- 2 tbsp grated / paste green chilli
- 1 tbsp grated / paste ginger (adrak)
- 2 tbsp red chilli powder (as you want)
- ½ tbsp tumeric powder (Haldi)
- 4 tbsp oil
- ½ tbsp mustard seeds (rai / sarson)
- 1 tbsp sesame seeds (til)
- ¾ tbsp asafoetida (hing)
- 2 pinches of baking soda
- 9,10 curry leaves (kadi patta)
- chopped coriander (dhania)
- salt to taste
Instructions
- To make dudhi's Muthiya, grind the dudhi and squeeze it and drain it.
- Take 2 cups of Lauki in a bowl, add 1 cup of Besan flour, add 1 cup of Rice flour, ½ cup of Bajri flour, 1 cup of corn/ Makki flour,
- Add 1 cup of grated onion, 2 tbsp of grated/paste Garlic, 2 tbsp grated/paste green chilli, 1 tbsp grated/paste ginger,
- 2 tbsp red chilli powder, ½ tbsp turmeric / Haldi, salt as per taste, 2 pinch of baking soda,¾ tbsp asafoelida / hing, 2 tbsp coriander then add 2 tbsp oil mix well.
- take a sieve ( can be made to steam Muthiya), apply oil on that sieve and also apply it on your hands a little while keeping the same shape and put it in the sieve then steam it for 20 minutes. When you are sure, let it cool, then cut it.
- Take a non-stick pan, then add 2 tbsp of oil to it, add ½ tbsp of mustard seeds, add 1 tbsp of til and then add 9-10 curry leaves Once brown, add dudhi muthiya (cut) and mix it well. Keep the gas on a medium flame for 30 seconds garnishing with coriander and serve it .

How to make Dudhi na muthiya recipe with step-by-step photos:
1.To make dudhi’s Muthiya, grind the dudhi and squeeze it and drain it.

7. Then steam it for 20 minutes. When after 20 minutes you are sure, let it cool, then cut it.
8. Take a non-stick pan, then add 2 tbsp of oil to it, add ½ tbsp of mustard seeds, add 1 tbsp of 1 tbsp sesame seeds (til) and then add 9-10 curry leaves Once brown, add dudhi muthiya (Steamed) and mix it well. Keep the gas on a medium flame for 30 seconds garnishing with coriander and serve it.
9. Dudhi Na muthiya is ready to eat. Eat it hot in winter. And it is a very healthy and good snack.
